Baked salmon rice with Campbell mushroom soup

Decided to post this recipe as my boy really loves to eat this and wanted to share it with my friends. Ingredients 1.2 cup of cooked rice 1 salmon slab chopped garlic diced onion diced carrot *any veg to your liking 1 pack of Emborg 3 cheese bake (shredded) 1 can of Campbell mushroom soup butter olive oil salt and pepper dried parsley Recipe 1. Marinate salmon and bake it in oven till cooked (about 180 degree for 10 to 12 minutes). I used Italian herb rub for the marinate. You can use simple salt and pepper if you do not have any herbs. Wait till it cools down then flake it and set aside. 2. In the wok, heat up butter and olive oil (You can choose to use either one). Add in the garlic, onion and carrot. Let it cook for a while before adding other veg if you have. Then add in the cooked rice. 3. Stir fry till the rice and veg are evenly mixed before adding in the salmon. Pan fried Teriyaki Salmon

Teriyaki salmon is one of the usual dishes I will order outside for my boy. He loves to eat Japanese food. I ever bought the ready made teriyaki sauce but find that the taste is not to my liking. That day when I had to cook for just me and him, I decided to make this simple salmon dish. To make a complete meal, just steam some broccoli or make side dishes to go along. Ingredients Salmon Salt Pepper Spring onions (optional) White sesame (optional) Sauce 1 tbsp soy sauce 1 tbsp sugar 1 tbsp chinese cooking wine Recipe 1. Marinate the salmon with salt and pepper. Pat dry with a kitchen towel. 2. Heat a little oil in the pan and place the salmon skin side down. Let it cook for at least 4-5 minutes. Be really patient and do not try to flip the salmon. You will see from the side that it will start turning pink from bottom up. Wait till it has reached the mid-way before flipping. 3. Steamed salmon with lemon

This week has been a little hazy on and off and my poor little boy is down with runny nose and cough. So I have been trying to do steam dishes everyday so that it is less heaty for him. Whenever I steam salmon, I will stick to soy sauce and keep it simple as salmon has more flavour compared to other fish. I was wondering if I could try a different variation of steamed salmon and lemon came to my mind. I happened to have it in my fridge as it is very useful for various dishes. Ingredients 1 Salmon fillet Lemon slices Ginger Spring onion Sesame oil Salt Cooking wine Sauce 1 tbsp soy sauce 1 tsp lemon juice 1 tsp sugar 1 tsp cooking wine  3 tbsp water Recipe 1. Rub salt over the salmon fillet and pour 1 tsp cooking wine on it. Let it marinate for 5 minutes. 2. Prepare the sauce by mixing the listed ingredients above and set aside. 3. Baked salmon with cheese and capsicum

I have never really like capsicums since young. Maybe because my mum does not cook them. But I have learn to incorporate them in my cooking occasionally because I like the flavour it imparts on the meat and fish. Pardon my photo below cuz I know you cannot see the salmon at all due to overloading of cheese and capsicum. I was trying to clear the fridge... :p  Ingredients Salmon Capsium (yellow & green) Bunashimeiji Salt Pepper Olive oil Some stock Shredded cheese mix  (for pizza etc.) Dried parsley Recipe 1. Marinate the salmon with salt and pepper and place them on the baking tray. 2. Cut the capsicum into cubes and remove the bottom parts of the bunashimeiji mushrooms. Arrange them on top of the salmon. 3. Add the shredded cheese on top to ensure it is covered. 4. Drizzle olive oil over it and add some stock to it. (I added the ABC soup I was cooking) 5. Miso baked salmon

While I was working, I was thinking how should I cook the salmon for dinner? Found a recipe by this cooking blog - white on rice couple (their blog name is so cute!) sharing their lovely recipe roasted salmon with miso glaze ! I am pretty satisfied with the overall taste. We all ate a lot of rice! Ingredients 1 salmon fillet 1 Tbsp white miso paste 1/2 Tbsp sake (I replaced with my own rice wine) 1/2 Tbsp soy sauce 1/2 Tbsp brown sugar 1/2 tsp sesame oil Sesame seeds Chopped spring onions Recipe 1. In a bowl, add in the white miso paste, sake, soy sauce, brown sugar and sesame oil and mix well. 2. Brush the marinade on the salmon fillet and set aside for 30 minutes. 3. Remove some of the marinade off the fillet, leaving a thin layer. (Additional step as I did not want it to be too salty) 4. Bake it in preheated oven at 190 degree celcius for 20 minutes. Spicy salmon fusilli

A trip down to the supermarket with my family with a trolley and we ended up buying a lot of stuffs which I usually don't buy. That includes a cute bag of alphabet pasta for my son and fusilli for us. In order to put it to good use, I decided to make pasta for a quick lunch. I remembered how I used to buy pasta sauce and always ended up throwing away the unfinished portion because I only used it once or twice before it expired. So this time, I tried to make a simple sauce with whatever I had at home in order not to waste and it was a good lunch! Ingredients Fusilli Salmon Chilli sauce Tomato sauce Italian herbs  1 finely chopped onion 1 tsp chopped garlic Salt Pepper Recipe 1. Pan fried Salmon

Salmon is one of our favourite fish. It is packed with healthy omega-3 and does not have a fishy smell. For me, I like it as it is easy to prepare for cooking too. On busy days I would either steam it in soy sauce or pop into the oven with some herbs. This time I tried to pan fry it with very simple seasonings and it turned out to be quite nice too. I was inspired by a bento set with "salmon shioyaki" that I ate a few weeks ago.
